Ingredients

  • Wheat Flour 10 oz
  • Coarsely Ground Rye Flour 10 oz
  • Honey 5 oz
  • Sugar 5 oz
  • Butter 5 oz
  • Milk 5 fl oz
  • Cinnamon 1 teaspoon
  • Cardamom 1 teaspoon
  • Ginger 1 teaspoon
  • Egg white 1 piece
  • Powdered Sugar 10 oz

Step-by-Step Guide

Step 1

Place a small pot on the stove. Add butter, honey, and sugar. Stirring, bring to a boil without allowing it to bubble, and dissolve the sugar.

Step 2

While the sugar is dissolving, measure the required amount of flour, add a pinch of salt, spices, the egg, the yolk, and milk. Mix well.

Step 3

Add the hot honey mixture to the dough and knead well.

Step 4

The dough should be soft and slightly sticky to the hands. Wrap the finished dough in plastic wrap and refrigerate for a few hours, preferably overnight.

Step 5

Next, cut out shapes, bake, and decorate with icing.

Step 6

For the icing, separate the egg white from the yolk very carefully. Whisk with a fork until a light foam forms. Gradually add powdered sugar while continuing to mix. Finally, add lemon juice. Mix until a stable mass forms.

Step 7

Cover with a damp cloth and let sit for 30 minutes to allow all the bubbles to escape.

Step 8

Transfer to a piping bag with a narrow tip (I use a small plastic bag and poke a hole in the corner with a toothpick). Draw patterns.
