Ingredients

  • Wheat Flour 0 oz
  • Self-rising flour 5 oz
  • Spices 1 teaspoon
  • Grated Ginger Root 2 teaspoons
  • Ground Cinnamon ½ teaspoon
  • Butter 5 oz
  • Light Molasses 3 tablespoons
  • Maple syrup 5 fl oz
  • Farm fresh eggs 2 pieces
  • Candied fruits 5 oz

Step-by-Step Guide

Step 1

Grease a 1.5-liter pudding mold with softened butter. Grease a sheet of foil with butter. Place a sheet of parchment paper on top of the foil, making a fold in the center.

Step 2

Sift both flours, ginger, spices, and cinnamon into a large bowl, making a well in the center. In a saucepan, combine the butter, maple syrup, and molasses, set over medium heat, and heat until the butter is melted and the ingredients are well combined. Slightly cool and pour into the well in the flour, add lightly beaten eggs and finely chopped ginger. Mix well, but do not beat.

Step 3

Pour the batter into the prepared mold, cover with the foil and parchment paper, parchment side down, and press down lightly. Place the mold in a larger pot and fill halfway with boiling water. Bring to a boil over high heat. Reduce the heat to medium, cover, and cook for 2 hours. Add boiling water as needed.

Step 4

Carefully remove the mold from the pot and let it sit for 5 minutes. Invert onto a plate, cut into pieces, and serve drizzled with custard.
