  • Wheat Flour 1¾ cups
  • Oat flakes ½ cup
  • Sugar ¾ cup
  • Baking Powder 1 teaspoon
  • Flaxseeds ½ cup
  • Salt ½ teaspoon
  • Activated Baking Soda ¼ teaspoon
  • Chopped almonds 0 oz
  • Candied fruits 5 oz
  • Large eggs 2 pieces
  • Buttermilk 1 cup
  • Vegetable Oil 0.3 cups
  • Turnips 20 oz

Step-by-Step Guide

Step 1

Grate the carrots using a large grater.

Step 2

Preheat the oven to 390°F (about 400 degrees Fahrenheit). Grease a muffin tin with oil or place paper liners in each cup.

Step 3

In a bowl, mix the all-purpose flour, oat flour, sugar, flaxseeds, baking powder, baking soda, salt, and finely chopped ginger.

Step 4

In another bowl, whisk the eggs with buttermilk and vegetable oil. Then add the dry ingredients, mix well, and incorporate the grated carrots (500 grams).

Step 5

Spoon the batter into the muffin cups and let it sit for 10 minutes.

Step 6

Bake in the oven for 20-25 minutes until done, checking with a toothpick.

Step 7

Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
