  • Coarse Cornmeal ½ cup
  • Grated Ginger Root 2 teaspoons
  • Baking Powder 1 teaspoon
  • Salt ¼ teaspoon
  • Activated Baking Soda ½ teaspoon
  • Farm fresh eggs 2 pieces
  • Egg white 2 pieces
  • Orange juice concentrate 1 tablespoon
  • Citrus Zest Mix 2 teaspoons

Step-by-Step Guide

Step 1

Preheat the oven to 320°F (320 degrees Fahrenheit). Line a baking sheet with parchment paper.

Step 2

In a large bowl, mix all the flours, sugar, ginger, baking powder, baking soda, and salt. In another bowl, whisk the eggs, egg whites, zest, and orange juice. Combine both mixtures and gently knead with a wooden spoon.

Step 3

Place the dough on a floured surface, divide it into 2 parts, and shape into logs. Place on the baking sheet.

Step 4

Bake for 20–25 minutes, then let cool slightly.

Step 5

Reduce the oven temperature to 300°F (300 degrees Fahrenheit).

Step 6

Using a sharp knife, cut the logs diagonally into small slices and place them on the baking sheet. Bake for another 15–20 minutes, flipping once. Cool on a wire rack.
