Gin and Tonic Granita

Ingredients

  • Gin 5 fl oz
  • Tonic 15 fl oz
  • Sugar 5 oz
  • Lemon 2 pieces

Step-by-Step Guide

Step 1

Mix the tonic water with gin in a bowl. Pour half of the mixture into a saucepan, add sugar, lemon zest, and the juice of 2 lemons. Bring to a boil, stirring until the sugar dissolves. Allow to cool slightly. Pour in the remaining tonic mixture. Transfer to a low freezer-safe container with a capacity of 850 milliliters.

Step 2

Freeze until the mixture hardens at the edges but remains slushy in the center. Fluff with a fork and freeze for another 2 hours until firm.

Step 3

Fluff again with a fork or in a food processor; divide into glasses. Serve with mint and cookies.
