Gianduja Ice Cream

Ingredients

  • Sugar ¾ cup
  • Roasted Peanuts 10 oz
  • Salt a pinch
  • Milk 4½ cups
  • Corn Starch 3 tablespoons
  • Liquid dark chocolate 5 oz

Step-by-Step Guide

Step 1

Place the nuts, salt, and sugar in a food processor and grind well. Transfer to a saucepan, add the milk, and bring to a boil while stirring constantly. Remove from heat, cover, and let sit for 20 minutes.

Step 2

Pour the mixture through a sieve into a bowl, then transfer to a clean saucepan.

Step 3

Pour 0.25 cup of the mixture into a small bowl and add the cornstarch. Mix well and pour back into the main mixture. Bring to a boil and cook for 2 minutes, whisking constantly. Remove from heat and add the chopped chocolate, stirring continuously until it melts completely and the mixture is smooth. Cool for about 3–6 hours, stirring occasionally.

Step 4

Transfer the mixture to an ice cream maker or simply to a container and freeze.
