Ingredients
- Lemon 1 piece
- Meyer Lemon Juice 10 fl oz
- Wheat Flour 10 oz
- Cinnamon 1 teaspoon
- Nutmeg ½ teaspoon
- Ground clove ½ teaspoon
- Salt to taste
- Baking Powder ½ teaspoon
- Chopped almonds 5 oz
- Candied Lemon Peel 0 oz
- Marinated cherries 12 pieces
- Brown Sugar 5 oz
- Powdered Sugar 5 oz
- Chicken Egg 1 piece
- Honey 10 oz
- Rum to taste
Step-by-Step Guide
Step 1
Heat the honey in a saucepan until bubbles form. Remove from heat and mix with brown sugar, lemon juice, egg, and lemon zest.
Step 2
Combine the flour, spices, baking powder, and salt. Add the honey mixture and knead the dough thoroughly. Add the candied peel and almond flakes, then refrigerate for a day.
Step 3
Preheat the oven to 375°F. Line a baking sheet with parchment paper. Cut the dough into circles with a diameter of 6 cm and place them on the baking sheet. Place half a cherry in the center of each cookie. Bake for 15-20 minutes.
Step 4
Prepare the glaze by mixing powdered sugar and rum. Drizzle the cookies with the glaze and sprinkle with toasted chopped almonds.
