German Cottage Cheese Cake with Raisins
Ingredients
- Wheat Flour 10 oz
- Baking Powder ½ teaspoon
- Egg white 11 pieces
- Egg white 6 pieces
- Butter 10 oz
- Sugar 5 oz
- Ground Almonds 1 tablespoon
- Vanilla salt 0 oz
- Brandy 0 fl oz
- Raisins 5 oz
- Egg Liqueur 0 fl oz
- Apple Wine 4 tablespoons
- Salt to taste
- Milk 10 fl oz
- Vanilla Pod 1 piece
- Cottage cheese 0 lbs
- Sour Cream 5 oz
- Lemon ½ piece
Step-by-Step Guide
Step 1
Boil 4 eggs and separate the yolks from the whites. Mash the boiled yolks with 1 raw yolk. Chop 250 g of sifted flour with baking powder and 150 g of chilled butter. Add sugar, 60 g of regular sugar, and 1 packet of vanilla sugar, ground almonds, and the yolk mixture. Pour in the wine and knead the dough. Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
Step 2
Soak the raisins in brandy and almond liqueur and let them steep.
Step 3
Preheat the oven to 430°F.
Step 4
Place the dough in a greased springform pan, create a border, and prick the dough with a fork. Add the filling. For this, mix 40 g of flour and salt with a little milk. Split the vanilla pod lengthwise, scrape out the seeds, and bring to a boil with the remaining milk. Add the flour mixture and bring to a boil. Cool while stirring constantly. Mix the cottage cheese with sour cream, add this mixture, and beat. Mash 6 yolks with 80 g of butter and add to the cottage cheese mixture. Pour in the lemon juice and add the raisins along with the brandy and liqueur. Fold in the 6 whipped egg whites.
Step 5
Bake the cake for about 1 hour.
