  • Wheat Flour 20 oz
  • Water 10 fl oz
  • Salt 0 oz
  • Extra virgin olive oil 0 fl oz
  • Dry yeast 0 oz
  • Onion 2 pieces
  • Sugar a pinch
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

In a large bowl or on a countertop, mix the flour with the salt. Gather it into a mound and make a well in the center. Add the yeast and sugar into the well and gradually pour in the cold water while kneading the dough.

Step 2

Knead the dough for about ten minutes. It should be soft and elastic.

Step 3

Leave it in a warm place for one and a half to two hours, covered with a clean towel, to allow the dough to rise.

Step 4

Peel the onions and slice them thinly—into rings or half-rings. Soak them in a bowl of cold water until the dough has risen.

Step 5

When the dough has risen, drain the water from the onions and mix them with the olive oil, seasoning with pepper and salt (to taste). Roll out the dough, place it on a baking sheet (on parchment paper), and spread the onions with oil over the surface of the focaccia. Let it rise for another half hour to an hour.

Step 6

Preheat the oven to 355°F. Place the focaccia in the oven for 25 minutes. Bake until golden brown.
