
Gazpacho with Kamchatka Crab

Ingredients
- Tomatoes 4 pieces
- Spiced Tomato Juice 5 fl oz
- Meyer Lemon Juice 1 tablespoon
- Crab Meat 5 oz
- Olive Oil 1 tablespoon
- TABASCO® to taste
- Salt to taste
- Ground Black Pepper to taste
- Garlic 1 clove
- Avocado 1 tablespoon
- Cress salad to taste
Step-by-Step Guide
Step 1
Blanch the tomatoes and remove their skin.
Step 2
In a blender, blend the tomatoes, tomato juice, lemon juice, garlic, and a little olive oil until smooth. Season with salt and pepper to taste. You can also add a dash of Tabasco sauce.
Step 3
Ladle the gazpacho into bowls, placing a spoonful of guacamole (which can be store-bought or homemade) in the center, and top with crab. Drizzle the soup with olive oil and garnish with watercress.
