Gazpacho with Homemade Croutons

Ingredients

  • Tomatoes 3 pieces
  • Orange Bell Peppers 1 piece
  • English cucumber 1 piece
  • Garlic 2 cloves
  • Onion 1 piece
  • White bread 2 slices
  • Olive Oil 2 tablespoons
  • Red Wine Vinegar 1 tablespoon
  • Ocean salt to taste
  • Ground Black Pepper to taste
  • TABASCO® to taste

Step-by-Step Guide

Step 1

In a large bowl, combine roughly chopped tomatoes, bell pepper, diced cucumber, crushed garlic, bread cubes, olive oil, vinegar, and 1 teaspoon of sea salt. Use your hands to mix the ingredients together. Refrigerate and chill for at least one hour.

Step 2

Remove the gazpacho from the refrigerator, blend in a blender or food processor until smooth. Season with salt and freshly ground black pepper. If desired, add a bit of TABASCO sauce. Chill again.

Step 3

To make the homemade croutons, you will need about one or two more slices of bread (depending on how many croutons you want). Heat a skillet over medium heat, add olive oil and swirl the pan to coat the bottom. When the oil is hot, add the bread cubes and fry, stirring, until crispy on all sides (about 6 to 8 minutes).

Step 4

Serve the gazpacho chilled with diced avocado, a drizzle of olive oil, and grated Manchego cheese.
