
Gazpacho with Chorizo

Description
Gazpacho originated before tomatoes arrived on the Iberian Peninsula and initially consisted of a mixture of water, oil, and bread crumbs. However, even today, gazpacho doesn't have to be made solely from tomatoes; there are variations made with cherries, plums, and green apples, and bread is not always used.
Ingredients
- Ground Black Pepper to taste
- Salt to taste
- Tomatoes 0 lbs
- Herbs 0 oz
- Chorizo 5 oz
- Celery stalk 5 oz
- Chives 0 oz
- Sweet Pepper 5 oz
- Apple 5 oz
- Radish 0 oz
- Cucumbers 5 oz
- Olive Oil to taste
- Red Wine Vinegar to taste
Step-by-Step Guide
Step 1
Grate the tomatoes with their skin on using a coarse grater, then strain through a sieve. Season with salt and pepper, add just a couple of drops of vinegar, and set aside for a while.
Step 2
Dice the apples and all the vegetables into small cubes, and without mixing, lightly season with salt and pepper. Also, dice the chorizo.
Step 3
Pour the tomato puree onto the plates, then top with the sliced vegetables and chorizo, and garnish with fresh herbs. Drizzle with olive oil.
