Gazpacho with Cayenne Pepper
Ingredients
- Turnips 5 pieces
- Celery stalk 3 pieces
- Scallions 4 stalks
- Courgette ½ piece
- Carrot 1 piece
- Vegetables 25 oz
- Orange Bell Peppers ½ piece
- Tomatoes 2 pieces
- Meyer Lemon Juice 1 tablespoon
- Cayenne Pepper ¼ teaspoon
- Avocado 1 piece
- Sour Cream to taste
- Cilantro to taste
Step-by-Step Guide
Step 1
In a food processor, combine chopped radishes, celery, cucumber, green onions, chopped carrot, and red bell pepper. Blend until finely chopped and transfer to a bowl.
Step 2
Add vegetable juice, lemon juice, finely chopped tomatoes, and cayenne pepper. Season with salt and pepper. Cover with plastic wrap and refrigerate for 1-8 hours.
Step 3
Pour the soup into serving bowls and garnish with sliced avocado. Top with finely chopped cilantro and add a small dollop of sour cream.
