Description
You can add chopped nuts to the filling for the gata.
Ingredients
- Wheat Flour 20 oz
- Butter 5 oz
- Matsoni 5 fl oz
- Salt a pinch
- Activated Baking Soda ½ spoons
- Powdered Sugar 10 oz
- Ghee 5 oz
- Whole egg 2 pieces
Step-by-Step Guide

Prepare the necessary ingredients.
Step 2
Sift 350 grams of flour into a large bowl, add salt and baking soda, and mix with butter until crumbly.
Step 3
Add matsoni and knead the dough.
Step 4
Place it in a bag or wrap it in plastic wrap, and refrigerate for 30–40 minutes.
Step 5
For the filling, mix powdered sugar with melted butter until well combined using a mixer.
Step 6
Then add 240 grams of flour and mix with your hands until you have a uniform, crumbly mixture.
Step 7
Divide the dough into two parts, roll it out into a rectangle about 2–3 mm thick, evenly spread half of the crumbly filling over the dough, and roll the dough into a tight log.
Step 8
Brush the roll with beaten egg yolks, create crosshatch patterns using a fork, and cut it into trapezoidal pieces of equal size. Repeat the same process with the remaining dough and filling.
Step 9
Transfer the cake to a baking sheet lined with parchment paper and place it in an oven preheated to 390°F for 10 minutes.
Step 10
Then reduce the temperature to 355°F and leave it in the oven for another 20 minutes, until the pie is golden brown.
