Step-by-Step Guide

Step 1

In a deep skillet, heat the olive oil and add the coarsely chopped garlic. Peel the shallots and roughly chop them as well, then add to the skillet and sauté everything together over medium heat for ten to fifteen minutes until softened.

Step 2

Pour in the broth and cream, and bring to a boil. Reduce the heat (the liquid should barely simmer) and cook for about two hours, until the volume is reduced by half.

Step 3

Transfer the finished soup to a blender, blend until smooth, and strain through a fine sieve. Season with salt and pepper before serving.
