Galettes with Tomatoes and Goat Cheese
Ingredients
- Wheat Flour 5 oz
- Tomatoes 12 pieces
- Goat cheese 5 oz
- Basil 18 leaves
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
- Butter 5 oz
Step-by-Step Guide
Step 1
Wrap 110 g of butter in foil and place it in the freezer for 45 minutes.
Step 2
In a large bowl, mix the flour and salt.
Step 3
Grate the butter coarsely over the flour and mix.
Step 4
Sprinkle the mixture with 2 tablespoons of cold water while continuing to stir.
Step 5
Place the dough in a plastic bag and chill for 30–40 minutes.
Step 6
Preheat the oven to 430°F.
Step 7
Peel the tomatoes.
Step 8
On a floured surface, roll out the dough to a thickness of 3 mm. Cut out 6 circles, place them on a greased baking sheet, and decorate with chopped basil leaves.
Step 9
Thinly slice the tomatoes and place them on top of the basil.
Step 10
Remove the rind from the goat cheese and crumble it on top.
Step 11
Dip the basil leaves in olive oil and decorate the galettes. Season with salt, pepper, and drizzle with olive oil.
Step 12
Bake for 10–15 minutes.
