Galette with Goat Cheese

Ingredients

  • Wheat Flour 5 oz
  • Olive Oil 4 tablespoons
  • Water 4 tablespoons
  • Onion 2 heads
  • Ground Caraway 1 teaspoon
  • Goat cheese 5 oz
  • Ricotta cheese 5 oz
  • Pitted olives 8 pieces
  • Chicken Egg 1 piece
  • Cream 3 tablespoons

Step-by-Step Guide

Step 1

Sift the flour and a pinch of salt into a large bowl. Add 3 tablespoons of olive oil and knead well. Gradually add water and knead until it forms a dough. Shape the dough into a disc and refrigerate for 30 minutes.

Step 2

In a skillet, heat the remaining oil and sauté the thinly sliced onion over low heat, covered, for 30 minutes. Season with salt and add half of the caraway. Let it cool.

Step 3

Preheat the oven to 355°F. Roll out the dough into a circle with a diameter of 30 cm. Spread the onion over the dough, leaving a 2 cm border. Top the onion with ricotta and sliced goat cheese. Arrange the sliced olives on top and sprinkle with the remaining caraway. Fold the edges of the dough to form a rim.

Step 4

Mix the egg and cream and gently pour it over the filling. Place on a baking sheet and bake on the lower rack for 45 minutes. Serve warm.
