Description

Galette is a thin, crispy pastry. The orange jam beautifully complements the apple filling, adding softness to the dried apricots that have been slightly dried during baking.

Ingredients

  • Wheat Flour 5 oz
  • Butter 5 oz
  • Water 4 tablespoons
  • Salt a pinch
  • Apple 4 pieces
  • Dried Apricots 5 oz
  • Sugar 3 tablespoons
  • Orange Jam 2 tablespoons

Step-by-Step Guide

Step 1

First, soak the dried apricots in water. They should sit for at least half an hour.

Step 2

Sift the flour into a deep bowl. Chop 90 g of butter into it, add a pinch of salt, and then rub everything together with your hands until it resembles crumbs.

Step 3

Add 4 tablespoons of cold water and knead into an elastic dough, form it into a ball with your hands, and place it in the refrigerator.

Step 4

Wash the apples, remove the cores and peels, and cut them into random pieces. Firmer apple varieties can be sliced into thin, neat slices, while softer apples can be cut into 4–6 pieces.

Step 5

Take the dough out of the refrigerator, roll it out on a silicone mat into a circle about 3–4 mm thick, then carefully transfer it onto floured parchment paper.

Step 6

On the baking sheet, form the galette: place the apples and dried apricots in the center in a random manner, sprinkle them with sugar. Next, take 30 g of butter, cut it into small pieces, and evenly distribute it over the fruit. Fold the edges of the galette inward, overlapping.

Step 7

Bake in the oven for 45 minutes at 355°F. When the oven turns off, take out the finished galette and immediately cover the filling with orange jam, then leave it to cool.
