Fruit Tarte Tatin
Ingredients
- Puff Pastry to taste
- Vanilla Pod 1 piece
- Butter 10 oz
- Grapefruits 5 pieces
- Powdered Sugar 5 oz
Step-by-Step Guide
Step 1
Place a thick layer of butter in a skillet and sprinkle with powdered sugar on top.
Step 2
Put the vanilla pod in the center of the skillet, having split it open beforehand.
Step 3
Peel the fruits and remove the cores (the fruits should be quite firm so they don't fall apart during caramelization), arranging them tightly cut-side down, as the tart will be flipped later.
Step 4
Cover with puff pastry, tucking the remaining edges under the fruits, and make several slits in the center of the pastry to prevent it from becoming too moist during cooking.
Step 5
Place on the stove. Caramel will begin to form, visible around the edges of the tart. Wait for 15–20 minutes. Steam must definitely escape from the slits in the pastry.
Step 6
Next, place the skillet in the oven for 20 minutes.
Step 7
Remove the tart from the oven, place a larger plate on top, and flip it over. It's ready. You can garnish with thick cream or ice cream.
