Ingredients

  • Chopped almonds 10 oz
  • Hazelnut 5 oz
  • Macadamia Nuts 5 oz
  • Dried Apricots 15 oz
  • Bananas 4 pieces
  • Raisins 0 oz
  • Hibiscus 0 oz
  • Mandarin Puree 1 piece
  • Honey 0 oz
  • Lemon 1 piece
  • Toasted Sesame 0 oz
  • Seedless Green Grapes 0 oz
  • Kiwi 2 pieces

Step-by-Step Guide

Step 1

Soak the nuts for 12 hours; do not soak longer, as the flavor may wash out.

Step 2

Chop the nuts in a blender or meat grinder; I used a blender, adding them in small batches.

Step 3

Grind the dried apricots until they form a sticky mass.

Step 4

Mix the raisins with the nuts, then with the dried apricots, and add honey — about 3 tablespoons heaped. Grind the lemon with the peel and add it to this 'dough' (just remove the seeds).

Step 5

You should end up with a thick 'dough'.

Step 6

Take a mold for the cake; it's better to sprinkle the bottom with sesame seeds to prevent sticking (you can also grind the sesame).

Step 7

Spread a layer of the dough.

Step 8

Make the filling from bananas and honey, for example, 3 bananas and 3 tablespoons of honey. Blend them to make a mousse, which we spread on top of the dough, then add the next layer of dough.

Step 9

If you want to color the cake red, grind some dried hibiscus leaves (just a little, as it is very sour) into powder and add it to the banana mousse; you can use this to spread on top of the cake. Decorate with fruits and sesame seeds; if the cake is tall, you can stick banana slices on the sides. If you don't have honey, you can substitute with dates.

Step 10

The essence of the cake recipe is simple: soaked nuts with dried fruits and honey, and a banana mousse as the cream, decorated with fruits.
