  • Strawberry 50 oz
  • Sugar 3 cups
  • Meyer Lemon Juice 4 tablespoons
  • Gelatin 5½ tablespoons
  • Cream (40%) 3 cups

Step-by-Step Guide

Step 1

In a blender, puree the strawberries, lemon juice, and sugar, reserving 2 tablespoons of sugar, until smooth. Strain through a sieve — you should have 6 cups of puree.

Step 2

In a bowl over a double boiler, combine the gelatin, 3 tablespoons of cold water, and 0.5 cup of strawberry puree. Mix and combine with the remaining strawberry puree.

Step 3

Place the strawberry mixture in a bowl of ice water for about 15 minutes to slightly thicken.

Step 4

Meanwhile, in a bowl, whip 2 cups of cream to stiff peaks. Add to the strawberry mixture.

Step 5

Fill molds with the strawberry soufflé and place in the freezer to set for about 3 hours.

Step 6

Remove the soufflé from the freezer 20 minutes before serving. Whip the remaining cream with the remaining sugar.

Step 7

Garnish the soufflé with whipped cream and serve.
