Frozen Green Tea Soufflé

Ingredients

  • Boiling water 5 fl oz
  • Sugar 5 oz
  • Green tea powder 1 tablespoon
  • Egg white 5 pieces
  • Cream (40%) 10 fl oz
  • Mint Water 1 tablespoon

Step-by-Step Guide

Step 1

In a bowl, mix boiling water and green tea powder. Chill in the refrigerator for 30 minutes.

Step 2

In a bowl, combine the tea, egg yolks, and sugar. Place over a water bath and whisk for about 8 minutes until airy. Remove from heat and whisk for another 5 minutes.

Step 3

In another bowl, whip the cream with mint syrup until stiff peaks form.

Step 4

Combine both mixtures and mix well.

Step 5

Pour into molds (pudding molds work very well) and place in the freezer for 4 hours or overnight.

Step 6

Remove 10 minutes before serving and sprinkle with green tea.
