Frozen Chocolate Truffles with Almonds
Ingredients
- Sugar ½ cup
- Whole egg 3 pieces
- Whipped Cream ¾ cup
- Liquid dark chocolate 10 oz
- Ground Almonds ½ cup
- Amaretto Liqueur 2 tablespoons
Step-by-Step Guide
Step 1
In a small bowl, mix the sugar and egg yolks.
Step 2
In a small saucepan, bring the cream to a boil. Slowly, while whisking, add the hot cream to the egg mixture. Return the mixture to the saucepan and heat over low heat until thickened, about 3 minutes (do not let it boil).
Step 3
Remove from heat and add 230 grams of chopped chocolate. Stir until smooth, then pour in the amaretto. Cover and place in the freezer for at least 3 hours.
Step 4
Using a large spoon, scoop out the chocolate mixture and shape it into balls. Roll half in the ground almonds and the rest in the chopped chocolate.
Step 5
Place the finished balls in a container lined with parchment paper and freeze. Serve frozen.
