Description

Fried pirozhki made from yeast dough

Ingredients

  • Wheat Flour 0 lbs
  • Milk 2½ glasses
  • Sugar 1 tablespoon
  • Vegetable Oil 3 spoons
  • Chicken Egg 2 pieces
  • Salt 1 tablespoon
  • Dry yeast 0 oz

Step-by-Step Guide

Step 1

Prepare the starter by dissolving the yeast in warm water (or milk), then add half of the flour intended for the dough and mix well to avoid lumps. Place the bowl with the starter in a warm place for 40–50 minutes to rise. Once the dough has risen, add melted butter, eggs, sugar, and salt, and mix well. Gradually incorporate the remaining flour and knead the dough until it pulls away from the sides of the bowl. After that, place the dough back in a warm spot for 1.5 hours. As soon as the dough rises, punch it down and let it rise again. Then transfer it to a floured surface or board for shaping.

Step 2

You can also prepare the dough without a starter. Dissolve the yeast in water or milk, add the butter, eggs, sugar, and salt, then mix in all the flour. Knead the dough well and let it rise twice afterwards.

Step 3

While the dough is rising, prepare the filling so that as soon as the dough is ready, you can immediately start shaping the pastries.

Step 4

Cut the prepared dough for the pastries into pieces weighing approximately 40–50 g, shape them into balls, and let them rise slightly. Then, roll each ball into a flat disc about 0.5–1 cm thick, place the filling in the center, fold the edges of the dough together, and pinch to seal. Arrange the pastries on a floured board or baking sheet, and allow them to rise in a warm place.

Step 5

After that, fry the pastries in a skillet with melted butter or vegetable oil, flipping them from one side to the other until they are golden brown. Similarly, prepare doughnuts filled with jam, preserves, apples, and so on.
