Description

Berry puree is used as a filling for donuts, pastries, cakes, as well as for making sweet sauces for puddings and fruits cooked in syrup.

Ingredients

  • Chestnut puree 1 cup
  • Sugar 15 oz

Step-by-Step Guide

Step 1

Clean ripe strawberries, wild strawberries, raspberries, or black currants from stems, rinse them in cold water, let them drain, then press the berries through a fine sieve into a ceramic or enamel bowl and add sugar.

Step 2

Mix the puree well, place it in a cool place for 5–6 hours, stirring occasionally to help the sugar dissolve faster.

Step 3

Pour the puree into clean bottles and seal them with corks that have been boiled in water. If the puree is intended for long-term storage, it is recommended to seal the necks of the bottles with sealing wax or paraffin. Store the bottles with the puree in a cool place.
