Description
The dough for this tart is intended to be savory, while the caramelized pears provide a contrast, but in practice, it is better to increase the amount of sugar.

- Wheat Flour 1 cup
- Butter 5 oz
- Sugar 5 oz
- Pears 20 oz
- Farm fresh eggs 2 pieces
- Brandy 1 tablespoon
- Salt a pinch
- Powdered Sugar 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Mix the flour, sugar, and 100 grams of butter, and rub everything into a uniform, buttery crumb using a fork.
Step 3
In a separate bowl, beat the 2 eggs with a pinch of salt, then add to the buttery crumb and knead into a sticky, soft dough.

Wrap the dough in plastic wrap and place it in the freezer for 20 minutes.
Step 5
Peel and core the pears, slice them, and drizzle with brandy (the alcohol will evaporate during cooking).
Step 6
In a deep baking dish or skillet where you will bake the tart, place 50 grams of butter and the powdered sugar, put it on the stove, and melt while stirring.

Arrange the pear slices in a circle and sauté for about 10–15 minutes until you see that the powdered sugar begins to thicken and caramelize (the pears should turn a deep brown color and look translucent).
Step 8
Roll out the dough to fit your baking dish, cover the hot pears with the dough, pressing it down slightly.
Step 9
Place the tart in the oven and increase the heat to 430°F. Bake for about 25–30 minutes until the surface of the tart is golden brown.
