Description

The base of the soup is a diet turkey broth. If you want to ensure that the word 'diet' remains a feature of the soup, you can substitute the butter used for sautéing the vegetables with vegetable oil. However, if you can overlook the diet aspect, stick with the butter—it makes the soup much tastier.

Ingredients

  • Chicken fillet 20 oz
  • Sliced Processed Cheese 5 oz
  • Potato 15 oz
  • Onion 5 oz
  • Carrot 5 oz
  • Butter to taste
  • Salt to taste
  • Ground Black Pepper to taste
  • Herbs to taste
  • Bay leaf to taste
  • Allspice berries 2 pieces

Step-by-Step Guide

Step 1

In a 3-liter pot, place the meat and add water. Once the broth begins to boil, add 1 teaspoon of salt, 2 peppercorns each of allspice and black pepper, and 2-3 bay leaves. Boil for 20 minutes from the moment it starts boiling. Then, remove the meat.

Step 2

Peel the potatoes and cut them into cubes. Dice the onion. Grate the carrot. Cut the meat into small pieces. If using a block of processed cheese, grate it or cut it into cubes.

Step 3

Add the potatoes to the boiling broth. Cook for 5–7 minutes from the moment it starts boiling.

Step 4

In the meantime, make a light sauté in butter. First, add the onion, then the carrot. Lightly season with salt and pepper. Add the sauté to the soup and cook for another 5–7 minutes.

Step 5

Then add the chopped meat. Cook for 3–4 minutes, add the processed cheese, mix well, and turn off the heat.

Step 6

Before serving, sprinkle with herbs. Optionally, serve with croutons.
