Description
To prepare this dish, the pieces of pork should be small and not thick.
Ingredients
- Pork Blood 20 oz
- Water 0 qt
- Carrot 10 oz
- White Part of Leek 2 pieces
- Bay leaf 4 pieces
- White Pepper (whole) 1 teaspoon
- Green peppercorns 1 teaspoon
- Onion 5 oz
- Garlic 1 clove
- Salt to taste
Step-by-Step Guide
Step 1
Cut the carrot into wide slices.
Step 2
Place the meat in a pot.
Step 3
Add the carrot and pepper on top.
Step 4
Crush the garlic with a chef's knife.
Step 5
Add the onion and garlic to the other ingredients.
Step 6
Place the bay leaf on the leek leaves.
Step 7
Tie the bouquet garni with kitchen twine.
Step 8
Lower the bouquet into the pot.
Step 9
Pour in the water and put on high heat.
Step 10
Once the water boils, reduce the heat and skim off the foam. Cook uncovered for 45 minutes.
Step 11
Once the broth is ready, season with salt, pour into deep plates, and serve.
