French Onion Soup without Croutons

Description
While sautéing the onions, you can add a couple of cloves of garlic, crushed with the flat side of a knife.
Ingredients
- Dry White Wine 5 fl oz
- Chicken Broth 0 qt
- Spanish onions 4 heads
- Butter 0 oz
- Wheat Flour 0 oz
- Brown Sugar 1 tablespoon
- Ground Black Pepper to taste
- Emmental cheese to taste
- Coarse Salt to taste
Step-by-Step Guide
Step 1
Melt the butter in a pot. Add finely chopped onions. Sauté, stirring occasionally, until the onions begin to caramelize. Season with salt and pepper.
Step 2
Toast the flour in a dry skillet until golden brown. Add it to the pot with the onions and mix well.
Step 3
Pour in the wine mixed with sugar, then add the broth. Bring to a boil and simmer for about half an hour.
Step 4
Serve topped with grated Emmental or a similar semi-hard cheese.
