French Onion Soup with White Wine

Ingredients

  • Onion 25 oz
  • Olive Oil 3 spoons
  • Butter 0 oz
  • Garlic 4 cloves
  • Sugar ½ spoons
  • Dry White Wine 10 fl oz
  • Chicken Broth 1⅕ l
  • Salt to taste
  • Ground Black Pepper to taste
  • French Baguette ½ pieces
  • Gruyère cheese 10 oz

Step-by-Step Guide

Step 1

Spray a large baking sheet with olive oil and spread the minced garlic evenly across the surface. Place the slices of bread on the sheet, turning them to ensure both sides are coated in oil. Bake for 25 minutes until golden and crispy.

Step 2

Place an ovenproof glass pot over high heat, and heat the butter along with the vegetable oil. Add the onion, garlic, and sugar, and cook, stirring, until the edges of the onion darken (6–8 minutes).

Step 3

Reduce the heat to low and, without covering with a lid, cook for another 30 minutes. The bottom of the pot should be covered with a thin layer of caramel.

Step 4

Pour in the broth and white wine, add salt and pepper, and stir with a wooden spoon, scraping the layer stuck to the bottom. Once the soup comes to a boil, reduce the heat to the minimum and simmer, uncovered, for 1 hour.

Step 5

Before serving, bring to a boil. Warm the soup tureen or individual bowls on the lower rack of the oven and preheat the grill. Pour the hot soup into the prepared dish and top with croutons.

Step 6

Sprinkle generously with a thick layer of hard Swiss cheese and place under the broiler until the cheese turns a golden brown and begins to bubble. Serve immediately!
