Description
Cheese toasts can be made in advance. In this case, the soup does not need to be baked.
Ingredients
- Light "Lamber" cheese, 15% fat content 5 oz
- Onion 6 heads
- Clarified Butter 4 tablespoons
- Dry White Wine 15 fl oz
- Thyme 0 oz
- Chicken Broth 0 qt
- Croutons to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Slice the onions into thin rings and sauté in butter.
Step 2
Add the white wine and reduce by two-thirds.
Step 3
Add the chicken broth and simmer on low heat. At the end of cooking, add salt, pepper, and fresh thyme.
Step 4
Grate the Lamber cheese and add it to the soup (in a clay pot or a special heat-resistant dish).
Step 5
Top with white bread toasts and bake.
