Ingredients
- Onion 0 lbs
- Dry White Wine 1 glass
- Vegetable Oil 4 spoons
- Chicken Broth 2 glasses
- French Baguette 12 pieces
- Grated Chocolate 5 oz
- Salt to taste
- Bouquet Garni 1 bunch
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Slice the onion into thin half-rings. Melt the butter in a skillet over medium heat, add the onion, and sauté until golden brown. Reduce the heat and simmer the onion with herbs.
Step 3
Pour dry white wine into the skillet with the sautéed onions. Bring to a boil and simmer over medium heat for at least 5 minutes. The wine should reduce by half.
Step 4
In a saucepan, heat the broth. Add the onion mixture to the broth, removing the herb sprigs beforehand. Bring the soup to a boil, season to taste, and simmer, covered, for 10 minutes.
Step 5
Toast the bread slices in a skillet or toaster. Pour the soup into ovenproof ramekins, place the bread pieces on top, and sprinkle with grated cheese.
Step 6
Place in the oven and bake until golden brown.
