French Mushroom Cream Soup
Ingredients
- Pickled Chanterelles 10 oz
- Onion 5 oz
- Chicken Broth 15 fl oz
- Butter 0 oz
- Truffle Oil 2 tablespoons
- Ground Black Pepper ½ teaspoon
- Cognac 0 fl oz
- 33% Cream 5 fl oz
- Ocean salt to taste
- Nutmeg to taste
Step-by-Step Guide
Step 1
Chop the onion and mushrooms into small pieces.
Step 2
In a deep skillet, heat the truffle oil and butter.
Step 3
Add the mushrooms and onion to the hot oil.
Step 4
After 2–3 minutes, stir and reduce the heat to medium.
Step 5
Season with black pepper.
Step 6
After 2 minutes, stir again and cover with a lid. Reduce the heat a bit more.
Step 7
After 5 minutes, pour in the cognac and stir.
Step 8
Add salt. After a minute, remove from heat.
Step 9
Transfer the mushrooms to a pot and pour in the broth. Heat to about 160°F, then remove from heat.
Step 10
Puree the mushrooms using an immersion blender.
Step 11
Pour in the cream and mix thoroughly.
Step 12
Ladle the soup into deep bowls and season with a pinch of nutmeg.
