Description
You will need to remove the cookies from the mold after 10 minutes, once you have taken them out of the oven (if they cool too much, they may stick).
Ingredients
- Farm fresh eggs 6 pieces
- Sugar 10 oz
- Wheat Flour 10 oz
- Chestnut flour 0 fl oz
- White Beans ½ piece
- Baking Powder 0 oz
- Butter 10 oz
- Citrus Zest Mix 0 oz
Step-by-Step Guide
Step 1
Mix the eggs with the sugar, honey, and vanilla seeds. Whip the mixture with a mixer.
Step 2
Combine the flour with the baking powder. Melt the butter over low heat and let it cool slightly.
Step 3
Add the flour, melted butter, and lemon zest to the egg mixture. Mix everything together. Cover with plastic wrap and let the dough rest for 30 minutes (or preferably overnight in the refrigerator).
Step 4
Grease the madeleine mold well with butter, and you can also dust it with flour.
Step 5
Using a piping bag, fill each mold about 2/3 full with the batter.
Step 6
Bake at 430°F for about 4 minutes, then reduce the temperature to 375°F and continue baking for about 10 minutes until golden brown.
