French Lemon Tart

Ingredients

  • Wheat Flour 1¼ cups
  • Butter 5 oz
  • Farm fresh eggs 6 pieces
  • Citrus Zest Mix 1 tablespoon
  • Lemon 3 pieces
  • Powdered Sugar 1½ cups
  • Condensed Milk 3 tablespoons
  • Heavy cream 5 fl oz

Step-by-Step Guide

Step 1

Mix the flour, butter, 2 eggs, and zest in a blender and form a ball of dough. Knead by hand until elastic and soft. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Step 2

Preheat the oven to 375°F. Roll out the dough thinly and line the bottom of a pie dish with it. Prick holes with a fork, cover with parchment paper, and fill with a weight (rice, dried peas, or beans). Bake for about 15 minutes, then remove the weight and return to the oven for another 5 minutes. Reduce the temperature to 300°F.

Step 3

Juice the lemons and finely grate the zest.

Step 4

In a bowl, mix the juice, zest, 4 eggs, powdered sugar (set aside 3 tablespoons), cream, and condensed milk. Strain this mixture and carefully pour it into the prepared crust.

Step 5

Bake the tart for another 30–40 minutes until the filling sets. It should be slightly liquid in the center until it cools. Dust with powdered sugar (3 tablespoons).
