French Asparagus Purée Soup
Ingredients
- Asparagus 20 oz
- Butter 6 tablespoons
- Onion 5 oz
- Wheat Flour 2 tablespoons
- Chicken Broth 2 cups
- 10% cream 2 cups
- Ground clove 0.1 teaspoons
Step-by-Step Guide
Step 1
Take the asparagus, clean it, and cut it into small pieces.
Step 2
Finely chop the onion.
Step 3
Sauté the onion in 3 tablespoons of butter for 5 minutes.
Step 4
Melt the remaining butter in a pot and add the flour and allspice.
Step 5
Now, stirring, pour in the chicken broth and bring to a boil.
Step 6
Add the asparagus, cover with a lid, and simmer on low heat for 20 minutes.
Step 7
Strain the broth, and pass the remaining pulp through a meat grinder, or sieve (you can also use a blender), and mix it with the broth.
Step 8
Now for the finishing touch: pour in the cream, heat it up, and season with salt to taste.
