Ingredients
- Pumpkin 10 oz
- Shelled pumpkin seeds 0 oz
- Sugar 2 spoons
- Parsley 2 sprigs
- Cream 5 fl oz
- Butter 0 oz
- IDEAL Clasico Olive Oil to taste
- IDEAL Clasico Olive Oil 0 fl oz
- Garlic 2 cloves
- Spanish onions ½ pieces
- Salt to taste
Step-by-Step Guide
Step 1
In a saucepan, heat olive oil together with butter, sauté the finely chopped red onion until translucent, and then add the minced garlic.
Step 2
Peel the pumpkin, remove the seeds, and cut it into small cubes. Add it to the onions and garlic. Add sugar, salt, and pepper, and sauté for 3-4 minutes. Then add 100 ml of water and cream, and cook for 10-15 minutes.
Step 3
Transfer the soup to a blender, add the parsley leaves, and blend until smooth.
Step 4
Pour the soup into a bowl and garnish with pumpkin seeds and drizzles of extra virgin olive oil.
