- Potato 20 oz
- Onion 0 lbs
- Butter 2 tablespoons
- Chicken Broth 0 qt
- Cream 0 fl oz
- Semi-soft cream cheese 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Parsley 2 stems
Step-by-Step Guide
Step 1
Peel, wash, and cut the potatoes into large cubes. Peel and slice the onions into thin rings. In a pot, heat the butter and lightly sauté the potatoes and onions.
Step 2
Pour in the broth and simmer on medium heat with the lid on for about 15 minutes at a gentle boil.
Step 3
Using a slotted spoon, remove some onions from the pot and set aside in a separate dish. Blend the remaining vegetables into a puree in the broth using a blender or mixer.
Step 4
Stir in the cream and cheese, and season with salt and ground black pepper.
Step 5
Ladle the soup into deep bowls, add an equal amount of the reserved onion rings to each, and serve, garnished with parsley leaves.
