Four Cheese Pie
Ingredients
- Wheat Flour 10 oz
- Butter 5 oz
- Water 100–110 ml
- Whole egg 5 pieces
- Egg white 3 pieces
- Grated Pecorino Pepato Cheese 5 oz
- Ricotta cheese 5 oz
- 10% cream 10 oz
- Goat cheese 5 oz
- Camembert cheese 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
For the dough, you will need 250 g of flour, 125 g of butter, 100–110 ml of water, 1 yolk, and 1 teaspoon of salt. All ingredients for the dough should be at room temperature. Place the dough ingredients in a bowl, mix, and gradually add water while kneading to form a soft, elastic dough. Shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
Step 2
For the filling, the cheeses I used are: gorgonzola, camembert, grana padano, and ricotta. Cut all soft cheeses into cubes or mash with a fork, while the others are better grated.
Step 3
Lightly whip the cream (it should not be thick), add 3 eggs and 1 yolk, and whip again. The mixture should have the consistency of liquid sour cream. All cheeses can be mixed together or divided into sections in the form.
Step 4
Remove the dough from the refrigerator. Roll out the dough to fit the size of the form, place it in the form, and grease with butter. Cover the pie with the second part of the dough.
Step 5
Preheat the oven to 355°F, place the pie on the second shelf from the bottom. Bake for 40 minutes.
Step 6
Serve warm with red wine.
