Focaccia with Tomatoes and Garlic

Ingredients

  • Garlic 2 cloves
  • Olive Oil 5 fl oz
  • Wheat Flour 20 oz
  • Tomatoes 1 piece
  • Dry yeast 0 oz
  • Salt a pinch

Step-by-Step Guide

Step 1

Peel the garlic and crush it with the flat side of a knife blade. Pour 75 ml of olive oil into a bowl, add the garlic, cover, and let it sit overnight.

Step 2

Sift the flour with salt into a large bowl. Add the yeast, 50 ml of oil, and 300 ml of warm water. Knead the dough.

Step 3

Place the dough on a floured surface. Knead for at least 6 minutes. Return to the bowl, cover, and let it rise in a warm place for 1 hour.

Step 4

Dissolve sea salt in 1.5 tablespoons of hot water. Let the water cool. Punch down the dough, place it in a rectangular baking dish, and stretch it with your hands to cover the entire surface of the dish. Spray with salted water.

Step 5

Make several indentations in the dough and drizzle with the remaining olive oil.

Step 6

Wash the tomatoes, dry them, and slice them into rounds. Arrange the slices on the focaccia, leaving 2.5 cm between them, and generously brush with garlic oil. Let it rest for another hour. Preheat the oven to 430°F. Bake the focaccia for 30 minutes.
