Focaccia with Rosemary

Ingredients

  • Wheat Flour 10 oz
  • Milk 5 fl oz
  • Butter 0 oz
  • Dry yeast 0 oz
  • Salt ½ teaspoon
  • Pitted olives 0 oz
  • Onion 1 piece
  • Whole egg 1 piece
  • Olive Oil 0 fl oz
  • Fresh Rose Hips 1 sprig

Step-by-Step Guide

Step 1

Peel the onion, finely chop it, and sauté in 20 grams of butter.

Step 2

Wash the rosemary, dry it. Remove the leaves. Finely chop the rosemary leaves and olives, and mix with the onion.

Step 3

In a saucepan, heat the milk and add the remaining butter. Remove the milk from heat and add the yeast.

Step 4

Sift the flour with salt into a large bowl, mixing with your hand, and gradually pour in the warm milk with butter and yeast. Knead the dough until it no longer sticks to your hands. Add the olives with onion and rosemary. Knead the dough again.

Step 5

Lightly dust the dough with flour, cover with a clean cloth, and let it rise in a warm place without drafts for 45 minutes.

Step 6

Preheat the oven to 430°F. On a floured surface, shape the dough into two oval flatbreads. Place the flatbreads on a baking sheet and make small cuts on top. Let the flatbreads rest for another 15 minutes.

Step 7

Beat the yolk with olive oil and brush the focaccias. Bake for 30 minutes. Allow the finished focaccias to cool for 10 minutes under a cloth. Serve warm.
