
Focaccia with Roasted Garlic, Green Onions, and Provolone Cheese

Ingredients
- Wheat Flour to taste
- Pizza Flour 20 oz
- Garlic 2 heads
- Dried Rosemary 1½ tablespoons
- Parmesan Cheese 5 oz
- Scallions 1 bunch
Step-by-Step Guide
Step 1
Make garlic paste from the garlic heads (see note).
Step 2
Preheat the grill.
Step 3
Divide the dough into 2 pieces and roll each out on a floured surface into a rectangle approximately 30x17 cm.
Step 4
Place 1 rectangle of dough on the grill and toast until golden, about 2 minutes. Flip and toast for another couple of minutes. Transfer to a cutting board. Repeat with the remaining dough.
Step 5
Let the baked dough sit for a couple of minutes and cut the focaccia in half lengthwise into 2 layers. Spread garlic paste inside the layers and sprinkle with rosemary. Then sprinkle with grated cheese and finely chopped green onions. Fold the halves together and press lightly.
Step 6
Wrap each focaccia in foil and place on the grill for 5–6 minutes, flipping once, until the cheese melts.
Step 7
Unwrap the foil and cut into strips. Serve immediately.
