Ingredients
- Wheat Flour 20 oz
- Salt to taste
- Water 10 fl oz
- Dry yeast 0 oz
- Corn Flour for Polenta 5 oz
Step-by-Step Guide
Step 1
Rub the yeast into the flour until a uniform crumb forms. Add salt, then water. Knead the dough for 2-3 minutes until it starts to come together. Let it rest for 1 hour.
Step 2
Preheat the oven to 480°F.
Step 3
Sprinkle the work surface with corn flour and carefully place the dough without stretching it. Divide the dough into 6 pieces. Dust all pieces with flour and shape them into rectangles.
Step 4
Cut each rectangular piece diagonally in the center with the flat end of a scraper.
Step 5
Make three more similar cuts in a fan shape from the center. Use your fingers to widen the cuts into holes.
Step 6
Bake on a floured baking sheet. Spray the oven with water and close it. Reduce the temperature to 445°F and bake for 10-12 minutes until golden brown.
