Fluffy peach raspberry ice cream with fruits
Ingredients
- Water 5 fl oz
- Sugar 5 oz
- Donut Peaches 5 pieces
- Raspberry leaves 20 oz
- Egg white 2 pieces
Step-by-Step Guide
Step 1
In a saucepan, bring water and 160 g of sugar to a boil, stirring until the sugar dissolves. Cool for 30 minutes.
Step 2
In a blender, combine 3 chopped peaches, half of the raspberries, and 60 ml of the sugar syrup. Blend until smooth, adding more syrup to taste. Strain the mixture through a sieve and chill for 1 hour.
Step 3
In a metal bowl, mix the egg whites with the remaining sugar and place over a water bath. Whip for about 2 minutes until the mixture is warm and the sugar dissolves. Remove from heat and continue whipping for about 5 minutes until stiff peaks form.
Step 4
Gently fold the fruit puree into the egg whites and freeze using an ice cream maker or in a container.
Step 5
Slice 2 peaches and lightly mash the remaining raspberries.
Step 6
Scoop the ice cream into serving dishes and garnish with peach slices and raspberries.
