Fluffy Pancakes
Baking and Desserts • Russian
Description
While thin pancakes are usually a wrap for some filling, thick and fluffy pancakes are quite self-sufficient; we perceive them as airy pastries with a golden, crispy crust. Fresh yeast gives these pancakes their special lightness, and they are best served with something cozy and homemade—like jam, fruit preserves, or sour cream.
Ingredients
- Milk 10 fl oz
- Dry yeast 0 oz
- Sugar 2 spoons
- Salt ½ spoons
- Wheat Flour 10 oz
- Vegetable Oil 0 fl oz
- Fruit preserve to taste
- Sour Cream to taste
Step-by-Step Guide
Step 1
Combine the yeast with sugar and warm milk until the sugar is dissolved.
Step 2
Add the flour and salt, and knead until you have a smooth, lump-free dough. Knead for 10 minutes.
Step 3
Cover the dough with plastic wrap and place it in a warm spot for 40 minutes. It should rise to 2 to 2.5 times its original size.
Step 4
Gently punch down the risen dough, cover it with plastic wrap, and place it in a warm spot for another 30 minutes.
Step 5
Heat vegetable oil in a skillet over slightly below medium heat.
Step 6
Spoon the batter onto a hot skillet with a spoon moistened in vegetable oil. Cover with a lid and fry for about 2 minutes.
Step 7
Flip the pancakes, cover with a lid, and cook for another 2 minutes.
Step 8
Place the finished pancakes on paper towels to remove any excess oil.
Step 9
Serve with apple jam or sour cream.
