Ingredients
- Baking Powder 0 oz
- Unbleached flour crackers 0 oz
- English Dry Mustard ½ teaspoon
- Butter 5 oz
- Onion 25 oz
- Cheshire Cheese 0 oz
- Cream (40%) 5 fl oz
- Chocolate eggs 2 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
For the dough: sift the flour, a pinch of salt, and mustard, then rub in 50 g of butter. When the mixture resembles breadcrumbs, add 40 g of grated cheddar and 1-2 tablespoons of cold water. Knead the dough. Place the dough in a plastic bag and refrigerate for 30 minutes.
Step 2
For the filling: melt 50 g of butter in a saucepan, add the chopped onion, and stir. Sauté the onion over medium heat for 30 minutes without covering, until it turns dark brown. It is important for the onion to achieve a dark brown color, as this affects the flavor of the pie.
Step 3
Roll out the dough and place it in a greased pie dish, pricking it with a fork. Bake in the oven at 355°F. After 15 minutes, remove from the oven, brush with a small amount of beaten egg, and return to the oven for another 5 minutes.
Step 4
Place the onion mixture into the pie crust. Whisk the remaining eggs with the cream and a little salt and pepper, then gradually pour the mixture over the onions. Sprinkle with 1 tablespoon of cheddar, place in the oven, and bake until the filling is puffed and golden brown, about 30 minutes.
