Flourless pancakes with pine nuts
Ingredients
- Cream 22% 5 fl oz
- Water 5 fl oz
- Chicken Egg 2 pieces
- Pistachios 0 oz
- Psyllium 0 oz
- Salt to taste
- Sugar Substitute to taste
- Coconut Milk 1 tablespoon
- Lightly Salted Red Fish to taste
- Semi-soft cream cheese to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Grind the pine nuts into a flour (it's easiest to use a coffee grinder for this, as the quantity is small).
Step 3
Crack the eggs into the mixing bowl.
Step 4
Add a pinch of salt and sweetener. Whip with a mixer for 1 minute.
Step 5
Heat the cream to 140°F. Gradually pour the warm cream and water into the egg mixture.
Step 6
Add pine nut flour and psyllium.
Step 7
Thoroughly mix the dough until it becomes sticky.
Step 8
Heat two non-stick frying pans (the pancakes are very delicate, making them easier to flip without tearing). Grease both pans with a thin layer of coconut oil or clarified butter.
Step 9
Pour about a ladle of batter onto a skillet and quickly spread it with a spatula into a thin pancake across the surface of the skillet.
Step 10
Brown the pancake on one side, then carefully remove it and flip it onto another skillet with the uncooked side down to brown it.
Step 11
Serve with any keto-friendly toppings, such as cream cheese or smoked fish.
