
Flourless Cookies with Seeds and Dried Fruits

Ingredients
- Sunflower Seeds 5 oz
- Shelled pumpkin seeds 5 oz
- Ground Oats 10 oz
- Toasted Sesame 5 oz
- Sugar 5 oz
- Farm fresh eggs 3 pieces
- Dried Turkey 5 oz
- Butter 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Line a baking sheet with parchment paper or foil to make it easier to remove the cookies.
Step 2
You need to divide the oats: toast 100 grams in a skillet until slightly browned (about 3–5 minutes). The remaining 150 grams should be processed into flour using a coffee grinder or blender. You can also toast the seeds, but it's not necessary.
Step 3
Melt the butter until smooth and combine it with the sugar, seeds, oats, sesame seeds, and oat flour.
Step 4
In a blender, chop the dried fruits. A mix of berries, prunes, apricots, or figs works wonderfully. Add the dried fruits to the main mixture.
Step 5
Add the eggs to the mixture and mix well.
Step 6
Using a spoon (I used a teaspoon), drop the cookie dough onto the baking sheet, leaving space between them as they will spread slightly while baking. Bake in the middle of the oven for 10–15 minutes until they are a nice golden brown.
