Flourless Chocolate Pear Cake

Ingredients

  • Butter 5 oz
  • Brown Sugar 5 oz
  • Liquid dark chocolate 5 oz
  • Brandy 1 tablespoon
  • Farm fresh eggs 3 pieces
  • Pears 4 pieces
  • Chopped almonds 5 oz
  • Powdered Sugar to taste

Step-by-Step Guide

Step 1

Cut a circle of parchment paper with a diameter of 25 cm to fit the bottom of the springform pan.

Step 2

Melt a small piece of butter, grease the bottom of the pan with it, then place parchment paper at the bottom and grease it with butter as well. Sprinkle a small amount of sugar (shake off the excess).

Step 3

Preheat the oven to 355°F. Melt the butter and chocolate in a water bath, remove from heat, stir in the brandy, and let cool.

Step 4

Separate the egg whites from the yolks. In a separate bowl, whisk the yolks with sugar. Pour the mixture into the chocolate and add the hazelnut flour (you can grind the hazelnuts in a blender).

Step 5

In a separate bowl, whip the egg whites into a soft but firm foam. Gently fold the egg whites into the chocolate-hazelnut mixture using a spatula (do this gradually: first fold in a tablespoon, then double the amount, and finally the rest). Pour the finished mixture into the pan.

Step 6

Peel the pears, remove the cores, and cut each in half. Arrange the pear halves around the edge of the baking pan, pressing them into the batter. Bake the cake for 40 minutes until the pears are soft and the cake is well baked. Let cool, remove from the pan, and dust with powdered sugar.
