Step 1

Preheat the oven to 355°F (350 degrees Fahrenheit). Line 2 baking sheets with parchment paper.

Place the walnuts on a cutting board and chop them lightly. Spread them on the baking sheet and bake in the oven until fragrant, about 9 minutes. Let cool.

In a bowl, mix together the powdered sugar, cocoa powder, and salt. Add the walnuts. Then, incorporate the egg whites and vanilla, and mix gently with a mixer or fork, but do not overmix, or the dough will become too thick.

Using a teaspoon, drop mounds of dough onto the baking sheet, leaving some space between the cookies. Bake for about 15 minutes, until the tops are slightly dry.
